My name is Carrie and in 2011, I was completely overwhelmed the day the doctor called and said you have celiac disease. I still remember exactly where I was when she called. As I hung up the phone, the tears streamed down my face. I swore it was the end of my life. And in many ways it was. The end of my life as an exhausted, depressed, emotionally out of control, terrible skinned, full of diarrhea, brain foggy, hours on the toilet self. But it was the beginning of a new life that I am now ridiculously grateful to live each day. Shortly after starting my website and also launching my Instagram account, I fell in love with the gluten free community. Being a seasoned gluten free expert, I started to find my footing in the community. And I found a hole that seemed to be missing. A one stop shop for all places 100% gluten free. After releasing the largest free in-depth resource to 100% gluten free establishments around the globe, I am hitting the road to help others live out their travel dreams while maintain a gluten free lifestyle. I will be interviewing places in person that are forging ahead to make the path brighter for those of us with this invisible illness. I’m forever grateful for a diagnosis that has given me answers, allowed me a second chance at life, and the community of others that share this disease with me.
